Eat: Coconut-cured ceviche. Beef tartare with yuzu kosho. Charcoal chicken, lemon myrtle. Steak frites, green pepper.
Room: Terracotta rammed earth, concrete tables, rattan chairs, palms overhead, baskets and clay pots out of Papua New Guinea. Cave-like chef's table against a stone bar.
If it rains: Umbrellas outside, covered chef's table and kitchen nook inside.
Catch: It is a restaurant with a rooftop, not a bar you roam. Seated afternoon, not a standing party.

Booking: Online to 30 guests, 30+ by email. Tables held 2 hours. No Saturday buyout, so you sit inside normal trade.
Eat: Seafood platter with Moreton Bay bugs and Sydney rocks ($130). Bug pizza. 800g T-bone to share ($140).
Room: Anna Spiro designed. Six arched doorways onto pink-umbrella decking, terracotta marble, star windows, vintage palm-tree upholstery in teal and pink. Cross-ventilated for the humidity.
If it rains: Best covered of the six. Weather protection outside, air conditioning inside.
Catch: 3.2 on Tripadvisor, the weakest here. No balloons, decorations or theming unless you buy the whole venue, which you cannot on a Saturday.

Room: 459 square metres across three sections, Mesa, Dunes and Terrace. Sandy tile, olive trees in terracotta, a cactus garden. One side looks into the Gabba, the other runs Queen's Wharf to the Valley. Holds about 100.
If it rains: Pergola roof over much of it with fans, but their own FAQ says exposed sections can be moved or cancelled on weather without notice.
Catch: 16 and over from 3pm on a Saturday. It gets genuinely packed on a good afternoon.

Catch: 3.6 on Tripadvisor. More than one reviewer says the view is what you are paying for. The pool belongs to the hotel, not to you.

Food: No set menu required. Dip n Sip pool pass $49pp buys two frozen cocktails, a towel and a reserved table. Everything else on consumption.
Booking: Holds 60 seated or 120 standing. No published group minimum. Events team via Ovolo.
Eat: Spiced lamb koftas. Charred prawns with toum. Halloumi sliders. Za'atar fries. Kingfish ceviche.
Room: Mediterranean terrace around a speckled-tile pool, citrus lounges, green-striped banquettes, greenery. Turns into a party as the afternoon goes gold.
If it rains: Partly covered bar, hotel directly underneath.
Catch: Smallest of the six. Bathers split a 40th crowd: half will be in, half will stand fully dressed by the bar.

Room: Glass-walled booths and high tables wrapped around the bar, 270 degrees over the city. Live music or DJs from around 5pm Friday and Saturday.
If it rains: Glass canopies over most of the terrace and a hotel below.
Catch: 3pm open kills the afternoon, and it reads as an evening cocktail bar rather than an all-day sun trap. Public holidays carry a 15% surcharge.
